热干面是武汉的城市名片,与北京炸酱面、山西刀削面、四川担担面、河南烩面并称"中国五大面食"。它的特色是"干":碱水面先煮至七八分熟,摊凉拌油晾干(这样面条筋道不坨),吃时再下沸水烫几十秒捞出,趁热拌上浓稠的芝麻酱、酱油、辣椒油、葱花、萝卜干和酸豆角。面条被芝麻酱裹得金黄油亮,每一口都香浓醇厚、筋道爽滑,早上来一碗,顶饱又提神。武汉人对它的爱是骨子里的——端着纸碗边走边吃,是武汉街头最经典的风景,据说武汉人每天要吃掉几百万碗。

Wuhan hot dry noodles (热干面, règānmiàn) is the beating heart of Wuhan's street breakfast — a city of industrial docks where dawn comes with a paper bowl and chopsticks in hand while walking. The genius is in the "dry": alkaline wheat noodles are par-cooked, oiled, and air-dried in advance so they stay springy; at service, a portion is dipped in boiling water for seconds, drained, and tossed hard with a thick, nutty sesame paste, soy sauce, chilli oil, scallions, pickled radish, and sour beans. Every strand is coated in golden sesame richness, with a chew that snaps back at you. It's a standing-up, five-minute-a-day food — and Wuhan eats it by the millions of bowls.

Where to eat: Any corner shop with a bubbling noodle pot and a crowd before 9 AM; Cai Lin Ji (蔡林记) is the famous chain. ¥6–12 ($1–2).

Pro tips: You must stir fast and thoroughly — the sesame paste hides at the bottom. Eat immediately; it gets heavy in two minutes. The classic pairing is a doujiang (豆浆, soy milk) to wash it down.
