剁椒鱼头是湖南湘菜的头牌菜,也是"不吃鱼头等于没到湖南"的代表。选用大花鲢(鳙鱼)鱼头,对半剖开,铺上湖南特产的剁辣椒——鲜红辣椒加盐、姜蒜发酵而成,酸辣鲜香,然后大火猛蒸,让剁椒的咸辣渗进细嫩的鱼头肉里。成菜红彤彤一片,辣香扑鼻,鱼头肉质滑嫩如豆腐,胶质丰富,越吃越有味。最经典的收尾:吃完鱼肉,把剩下的剁椒汤汁拌入面条或米粉,一锅两吃。辣度对初尝者很刺激,但湖南人无辣不欢,这道菜正是湘菜"香辣"精神的最佳代言。

Steamed fish head with chopped chili (剁椒鱼头, Duòjiāo yútóu) is the signature dish of Hunan's fiery Xiang cuisine — a whole big-head carp's head, split open and buried under a scarlet quilt of chopped fermented red chilli (duojiao), then steamed until the chili's salted, sour heat seeps deep into tender flesh. The result is a glistening red spectacle: cheek and collar meat so soft it falls apart, rich in gelatin and altogether transformed. The classic Hunan move is to finish the leftover chilli-and-juice with a bowl of noodles or rice — a second, even better meal out of the same plate.

Where to eat: Any proper Xiang restaurant — chain or local. ¥58–108 ($8–15), sized for two or more.

Pro tips: This is genuinely spicy — the duojiao is salted and fermented, so the heat has a fruity depth, but it bites. Go for the cheeks and the collar (the area behind the head) first: the best meat. The final noodle-toss is non-negotiable; don't leave the sauce behind.
