石锅鸡是西藏林芝地区最负盛名的美食,也是沿川藏线进藏者必尝的"能量补给站"。核心是那口锅:用墨脱县出产的云母石手工凿成的石锅,导热均匀、保温性极好,据说还富含微量元素。做法:藏香鸡(本地放养的鸡)或土鸡剁块,加手掌参、松茸、党参、红枣、枸杞等高原药材和菌类,放进石锅用文火慢炖数小时。成菜汤色金黄、菌香扑鼻,鸡肉用筷子一拨就离骨,汤鲜得让人连喝三碗。在八一镇(林芝市区)和鲁朗镇的石锅鸡一条街,是进藏游客打卡的必到之地。

Stone pot chicken (石锅鸡, shíguō jī) is the crown jewel of Nyingchi (Linzhi), Tibet — a dish that functions as the plateau's culinary rescue unit for travelers on the Sichuan-Tibet highway. The pot matters as much as the bird: it's hand-carved from mica stone quarried in Medog County, prized for even heat and superb insulation. Inside, a free-range Tibetan rooster is slow-simmered for hours with plateau treasures — shouzhang shen (hand-of-Buddha ginseng), matsutake mushrooms, codonopsis, red dates, and goji berries. The broth turns golden and banks up a deep, clean fragrance; the chicken falls off the bone at a glance, and the soup is so restorative that weary travelers genuinely credit it with curing altitude fatigue.
Where to eat: Bayi Town (八一镇) and Lulang (鲁朗) — the stone pot chicken street in Lulang is the pilgrimage site. One pot feeds 3-4 people, ¥168–298 ($24–42).
Pro tips: The mushrooms phase in the broth — matsutake season (July-Sept) is peak. Bring a group; the pot is big and you'll want seconds of soup. Ask them to add more herbs if you're air-sick from the drive.
