Mapo tofu (麻婆豆腐, Mápó dòufu) is the defining dish of Sichuan cooking — and the whole province's reputation in one bowl. "Mapo" means pockmarked grandmother: the dish was invented in 1860s Chengdu by a widowed chef with a pockmarked face, and her surname was Chen. What you get is silky soft tofu cut into cubes and simmered in a glossy, brick-red sauce of fermented broad-bean paste (doubanjiang), chilli oil, and fermented black beans, finished with a dramatic dusting of ground Sichuan peppercorn and spring onion. Done right, it hits six tastes at once: numbing, spicy, hot, fragrant, tender, and fresh. The numbing hits your tongue first, the heat lands after.
Where to eat: In Chengdu, the original Chen Mapo Tofu (陈麻婆豆腐) on Xiyu Long Street is the pilgrimage site, cheap at ¥25–35 ($4–5). Outside Sichuan, order it at any serious Sichuan restaurant and it'll be decent — great Sichuan restaurants abroad serve a seafood version with shrimp, but the original is pork or vegetarian beef-free versions.
Pro tips: The best way to eat it is spooned over plain steamed rice — the sauce is engineered for rice. True "má" (numbing) is the Sichuan peppercorn's tingling buzz, not capsaicin heat; if you only feel burn, they skipped the peppercorn. Vegetarian-friendly if the chef uses mushroom instead of minced pork — ask for 素的 (sù de).
