Guilin Rice Noodles: The City's Breakfast

Guilin rice noodles (桂林米粉 Guìlín mǐfěn) are what the city eats, and they cost less than a bottle of imported water. A bowl is ¥8-15 ($1.10-2.10): round rice noodles, a spoon of dark braising liquid made with star anise and rock sugar, slices of braised beef or crisp pork belly, roasted peanuts, spring onion, and a fistful of whatever pickles you want off the counter.

The thing worth knowing is that the classic version is not a soup. You order it 干拌 (gān bàn), dry-mixed, and toss the noodles in the braising sauce yourself until every strand is coated. Broth sits in a communal urn by the door — you take a small bowl and drink it alongside, or pour it in at the end when the noodles start drying out. Ordering "soup noodles" gets you a perfectly fine but less interesting bowl and marks you instantly as a visitor.

Portions are sold by weight in liǎng (两). Two liǎng is standard, three is a big appetite. You pay first at the counter, get a chit, hand it over at the window.

Finding a good one is easy: look for a plain shop with a queue of people eating fast on low plastic stools, ideally with no English menu and no photos on the wall. Chongshan (崇善米粉) near Zhengyang Pedestrian Street is the famous name and worth the short wait. Skip anything on a tourist street charging ¥25 ($3.50) — same noodles, triple the price.
