West Lake vinegar fish (西湖醋鱼, Xīhú cùyú) is the most storied dish in Hangzhou cuisine, with a genealogy that reaches back to a twelfth-century "Sister Song's fish soup" that allegedly saved an emperor from exile-era hunger. The modern dish is deceptively simple: a grass carp from the West Lake basin is poached in barely simmering water until the flesh turns silky and flake-soft, then dressed with a translucent amber glaze of Zhejiang vinegar, sugar, soy, and finely shredded ginger. The result is bright, mellow, and gently sweet with a clean vinegar snap — a dish that rewards patience rather than fireworks.
Where to eat: Louwailou (楼外楼), the century-old restaurant on West Lake's north shore, is the reference point; most Hangzhou bengbang restaurants do it. ¥88–168 ($12–24).
