文昌鸡是海南四大名菜之首,出产于海南文昌市(主要养在潭牛镇)。这种鸡是海南本地土鸡品种,散养于树林,平时吃椰肉、榕树籽、谷糠等,所以肉质紧实、皮薄骨细、风味特别。最经典吃法:白切(和广东白切鸡类似),整鸡浸煮后斩件,配海南特有的蘸料——蒜蓉、姜末、青桔汁、小米辣和生抽调成,酸辣鲜香。鸡肉皮爽肉嫩、鸡味浓郁,蘸料一蘸,回味无穷。海口的龙泉文昌鸡、文昌本地的农家乐是吃它的好去处。

Wenchang chicken (文昌鸡, Wénchāng jī) is the most famous of Hainan's legendary "Four Famous Dishes" — a free-range island chicken so prized that locals call it the pride of the province. The birds are raised in the coconut groves and wooded hills of Wenchang city, where they scratch for coconut flesh, banyan seeds, and grain — a diet that yields dense, silky meat and thin, tender skin with a faint sweet richness. The canonical preparation is white cut: poached whole until just cooked, hacked into gleaming golden pieces, and served with Hainan's signature dip — a pounded mix of garlic, ginger, fresh calamansi/lime juice, bird's-eye chili, and soy that is sour, bright and dangerously moreish.

Where to eat: Longquan Wenchang Chicken (龙泉文昌鸡) in Haikou is the reference point; Wenchang's own farm restaurants are even fresher. ¥58–128 ($8–18) per bird, half-birds available.

Pro tips: Order it with Hainan chicken rice (鸡油饭) — rice cooked in the chicken's fat. Use the dip generously; it completes the dish. Come hungry: a full Hainan chicken feeds three.
