Roujiamo (肉夹馍, ròujiāmó) is Xi'an's claim to hamburger glory — a sandwich so good it's been dubbed "China's original burger." The name is a compressed phrase meaning "meat stuffed into mo" (a flatbread). The mo is a white flatbread baked until its crust shatters and its interior stays soft and fragrant; the filling is pork belly slow-braised for hours in a master stock of twenty-plus spices until it collapses with a sheen of gelatinous fat. Chopped and packed into the hot bread with a dousing of braising juice, it's a study in contrasts: crisp bread, melting meat, aromatic fat.

Where to eat: Xi'an street stalls and shops — from the famous brand chains (e.g., 樊记肉夹馍) to any stall with a simmering pot. ¥8–15 ($1–2) each.

Pro tips: Order "肥瘦" (both fat and lean) for the best balance. Eat it immediately, still hot, at the shop — the bread goes stale fast. Pair with a bowl of 凉皮 (liangpi, cold noodles) or a bottle of the local 冰峰 (bingfeng) orange soda for the full Xi'an set.
