Roast whole lamb (烤全羊, kǎo quán yáng) is the centerpiece of Inner Mongolian hospitality — the dish reserved for honored guests, weddings, and festivals out on the grasslands. A whole spring lamb is dressed, seasoned inside and out, and slow-roasted over open coals for two to four hours while a cook turns the spit and brushes on oil and secret spice washes. What emerges has lacquered, crackling skin and impossibly juicy meat. Before the meal, there's ceremony: a toast of baijiu or milk wine, a silk hada scarf offered in greeting, a symbolic cut of the "fortune" character into the lamb's head — then the butcher carves it tableside while you grab the best pieces while they're hot.
Where to eat: Book ahead at a Mongolian restaurant (蒙餐) in Hohhot or at grassland tourist camps. A whole lamb for a group of 4-6 runs ¥500–900 ($70–130); many places also sell by the portion.
Pro tips: It's a feast, not a quick bite — arrive hungry with friends. The skin with a pinch of cumin salt is the best bite. If the group is too small for a whole lamb, order roast lamb chops (烤羊排) instead.
