Hand-grabbed lamb (手抓羊肉, shǒuzhuā yángròu) is the essence of Qinghai's grass-culture eating — and the word "grabbed" is literal: you wash up and eat with your hands. The cooking is radically simple: a whole lamb, cut into big bone-in chunks, simmered in nothing but water with ginger, scallion and a little salt, drawn at eight-tenths done. The meat is served with a dipping mix of salt, cumin, and chili powder, plus raw garlic, and that's the entire spread. Plateau-raised lamb is lean, sweet, and virtually game-free — every bite redeems the phrase "quality needs no seasoning."
Where to eat: Muslim (清真) restaurants in Xining and around Qinghai Lake; the market stalls of Dongguan (东关) area are legendary. ¥88–158 ($12–22) per jin (500g).
Pro tips: Ask for a mix of ribs and leg for contrast. Garlic is not optional in local culture — nibble a clove with a bite of lamb, the classic pairing. It's hearty: match with yogurt tea (奶茶) to balance the richness.
